Chocolate-Frosted Toffee Bars

Christmas Cookies

  • 1 cup butter
  • 1 cup firmly packed brown sugar
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 (6 ounce) package semisweet chocolate morsels, melted
  • 1 cup finely chopped pecans, toasted

Cream butter in a medium mixing bowl; gradually add sugar, beating until light and fluffy. Add egg yolk and vanilla, beating until well blended. Add flour, blending well. Press dough evenly into an ungreased 15x10x1-inch jellyroll pan. Bake at 325° for 20 minutes or until lightly browned. Cool slightly, and spread with melted chocolate. Sprinkle with pecans, and cut into 2×1-inch bars. Cool completely on wire racks.

Yield: about 6 dozen.
