Christmas Cookies

  • 1/4 cup shortening
  • 1 cup firmly packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all -purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 (6-ounce) package semisweet chocolate or butterscotch morsels
  • 1/2 cup chopped pecans

Melt shortening, and pour into a large mixing bowl to cool slightly; add brown sugar, beating well. Add egg and vanilla, beating until light and fluffy.

Combine flour, baking powder, and salt in a small mixing bowl; add to creamed mixture. Gently stir n chocolate or butterscotch morsels and pecans. Spread mixture evenly in a greased 8 inch square baking pan. Bake at 350° for 25 to 30 minutes. (Do not overbake.)

Cool completely in pan, and cut into 1-inch squares.

Yield: about 5 dozen.
