Bars and Squares
Christmas Cookies
- 1/2 cup shortening
- 1 cup sugar
- 3 eggs beaten
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 cup regular oats, uncooked
- 1 1/2 cups chopped, peeled apple
- 1/2 cup raisins
- 1/2 cup chopped pecans
- Sifted powdered sugar
Cream shortening; add 1 cup sugar, beating well. Add eggs; beat well.
Sift together flour, baking powder, salt , and spices in a medium mixing bowl; gradually add to creamed mixtures, stirring well. Stir in oats, apple, raisins and pecans, mixing well.
Press mixture into a greased 15x10x1 inch jellyroll pan. Bakes at 350° for 25 minutes or until lightly browned. Cool on a wire rack; sprinkle with powdered sugar, and cut into 2×1 inch bars.
Yield: about 6 dozen.
