Bars and Squares
Christmas Cookies
- 1/2 cup shortening
- 1 cup firmly packed brown sugar
- 2 eggs
- 1 1/2 teaspoons vanilla extract
- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup chopped dried apricots
- 1/2 cup chopped pecans
Cream shortening; add sugar, beating well. Add eggs; beat well. Stir in vanilla.
Combine flour, baking powder, and salt; add to creamed mixture, mixing well. Fold in apricots and pecans. Press mixture into a greased 13x9x2 inch baking pan. Bake at 350° for 18 to 20 minutes. Cool; cut into 2×1 inch bars.
Yield: about 4 1/2 dozen.
