Bars and Squares
Christmas Cookies
- 1 small ripe banana, mashed
- 1/4 cup shortening
- 1 egg
- 1 cup all-purpose flour
- 3/4 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/8 ground cloves
- 1/4 cup milk
- 1/3 cup chopped pecans
- Lemon Frosting
Combine bana and shortening; beat at high speed of an electric mixer 2 minutes. Add egg; beat 1 minute.
Sift together dry ingredients. Add to banana mixture; stir well. Stir in milk and pecans.
Pour batter into a greased 13x9x2 inch baking pan. Bake at 350° for 20 to 25 minutes. Spread with Lemon Frosting while warm; cool. Cut into 2×1 1/2 inch bars.
Yield: about 3 dozen.
Lemon Frosting:
- 1 cup sifted powdered sugar
- 2 tablespoons butter or margarine, melted
- 1 tablespoon water
- 2 tablespoons lemon juice
Combine sugar, butter, water, and lemon juice; beat until smooth.
Yield: frosting for about 3 dozen bars.
