Bars and Squares
Christmas Cookies
- 3 eggs
- 1 cup sugar
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chopped dates
- 1 cup chopped pecans
- Sifted powdered sugar
Beat eggs until thick and lemon colored; gradually add 1 cup sugar, beating well. Combine flour, baking powder, and salt; add to egg mixture, beating well. Fold in dates and pecans. Spread batter evenly in a greased 13x9x2 inch baking pan. Bake at 300° for 35 minutes. Cut into 3×1 inch bars; remove to wire racks to cool. Sprinkle with powdered sugar before serving.
Yield: about 3 dozen.
