Bars and Squares
Christmas Cookies
- 2 eggs
- 1 cup firmly packed brown sugar
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2/3 cup chopped pecans
- 1 cup chopped candied fruit
- 1/2 cup seedless raisins
- Sifted powdered sugar
Beat eggs until thick and lemon colored; gradually add brown sugar and vanilla, beating well.
Combine flour, baking powder, and salt; add to egg mixture. Fold in pecans, candied fruit, and raisins. Spoon mixture into a greased and waxed paper lined 11x7x2 inch baking pan. Bake at 350° for 30 minutes until firm and lightly browned. Removed to a wire rack to cool; remove waxed paper. Cut into 3×1 inch bars, and sprinkle with powdered sugar.
Yield: about 2 dozen.
