Christmas Cookies
- 2 eggs
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups finely chopped dried figs
- 1 cup chopped pecans
Beats eggs in a medium mixing bowl until foamy; gradually add sugar and vanilla, beating well.
Combine flour, baking powder, and salt; add to egg mixture, sitting well. Stir in figs and pecans; spread in a greased 9-inch square baking pan. Bake at 350° for 25 to 30 minutes. Cut into 1 1/2 – inch squares, and remove to wire racks to cool.
Yield: 3 dozen.
Note: 2 cups finely chopped dates may be used in place of figs.
