Bars and Squares
Christmas Cookies
- 2 eggs
- 1 cup sifted powdered sugar
- 1/3 cup butter or margarine, melted
- 3/4 cup sifted all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup coarsely chopped pecans or walnuts
- 1 cup chopped pitted dates
- 3/4 cup chopped candied fruit
- 1 cup sifted powdered sugar
- 2 tablespoons water
Beat eggs until thick and lemon colored in a large mixing bowl. Gradually add 1 cup sugar and butter; beat well.
Sift together flour, baking powder, and salt in a medium mixing bowl.
Spread pecans and fruit on a sheet of waxed paper; sift 1/2 cup flour mixture over top. Turn to coat well. Add remaining flour mixture to egg mixture, beating well. Stir in coated pecans and fruit. Pour batter into a greased 9-inch square baking pan. Bake at 325° fir 30 to 35 minutes. Cut into 2 x 1 inch bars, and remove to wire racks.
Combine 1 cup powdered sugar and water in a small mixing bowl; beat with a wire whisk until smooth. Spread a thin layer over warm bars, and cool completely.
Yield: about 3 dozen.
