Lemon Curd Bars

Christmas Cookies

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup butter or margarine
  • 1 egg, lightly beaten
  • 4 egg yolks, lightly beaten
  • 1 cup sugar
  • Grated rind of 2 lemons
  • Juice of 2 lemons
  • Topping (recipe follows)

Combine flour and baking powder in a large mixing bowl. Cut in butter with a pastry blender until mixture resembles coarse meal; add 1 egg, and mix well. Press mixture evenly into a lightly greased 9-inch square baking pan. Set aside.

Combine egg yolks, sugar, lemon rind, and juice in top of a double boiler. Cook over medium heat until thickened and smooth, stirring constantly to prevent lumping. Cool mixture, and spread over crust in pan. Spread topping evenly over lemon mixture. Bake at 350° for 20 to 30 minutes. Cut into 3 x 1 1/2 inch bars.

Yield: 1 1 /2 dozen.


  • 1 egg, well beaten
  • 3/4 cup sugar
  • 1 cup flaked coconut

Combine egg and sugar in a small mixing bowl, beating until light and fluffy. Stir in coconut, mixing gently until blended.

Yield: topping for 1 1/2 dozen bars.
