Drop Cookies
Christmas Cookies
- 4 egg whites
- Dash of Salt
- 2 cups sugar
- 1 cup fine dry breadcrumbs
- 1 cup finely chopped pecans
- 1 teaspoon vanilla extract
Beat egg whites (at room temperature) in a medium mixing bowl until foamy; add salt. Gradually add sugar, 2 tablespoons at a time, beating until stiff peaks form. Fold in breadcrumbs, pecans and vanilla.
Drop mixture by heaping teaspoonfuls 2 inches apart onto waxed paper-lined cookie sheets. Bake at 350° fir 15 minutes. Remove from waxed paper, and cool on wire racks.
Yield: 7 dozen.
