Drop Cookies
Christmas Cookies
- 4 egg whites
- 1 cup sifted powdered sugar
- Orange Filling
Beat egg whites (at room temperature) until foamy; gradually add sugar, beating constantly until peaks form.
Drop mixture by teaspoonfuls 2 inches apart onto aluminum foil-lined cookie sheets. Bake at 250° for 1 hour. Cool; remove from aluminum foil. Spread Orange filling on bottom sides of half of cookies. Top with remining cookies to from sandwiches.
Yield: 2 dozen.
Orange Filling:
- 2 tablespoons butter or margarine, softened
- 1 cup sifted powdered sugar
- 2 teaspoons milk
- 1 teaspoon grated orange rind
- Orange food coloring
Cream butter; gradually add sugar, beating well. Add milk and orange rind, stirring well. Tint with orange food coloring.
Yield: filling for 2 dozen cookies.
