Chocolate Pecan Meringues

Christmas Cookies

  • 2 egg whites
  • 1/8 teaspoon salt
  • 1/8 teaspoon cream of tartar
  • 3/4 cup sugar
  • 1 (6 ounce) package semisweet chocolate morsels
  • 2/3 cup chopped pecans
  • 1 teaspoon vanilla extract

Beat egg whites (at room temperature), salt and cream of tarter until foamy; gradually add sugar, beating until stiff peaks form. Fold in chocolate, pecans, and vanilla.

Drop mixture by heaping teaspoonfuls 2 inches apart onto parchment lined cookie sheets. Bake at 300° for 25 minutes. Remove from parchment, using a sharp spatula, and cool on wire racks.

Store in airtight containers.

Yield: 3 dozen.
