Chocolate Walnut Meringues

Christmas Cookies

  • 1 (6 ounce) package semisweet chocolate morsels
  • 2 egg whites
  • 1/2 cup sugar
  • 1/2 teaspoon vinegar
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 3/4 cup chopped walnuts

Melt chocolate morsels in top of a double boiler over simmering water. Let cool slightly.

Beat egg whites (at room temperature) until foamy; gradually add sugar, 2 tablespoons at a time, beating until stiff peaks form. Add vinegar, salt, and vanilla, beating well. Fold in melted chocolate and walnuts.

Drop mixture by teaspoonfuls 2 inches apart onto well-greased cookie sheets. Bake at 300° for 20 minutes. Remove from cookie sheets, and cool on wire racks. Store in airtight containers.

Yield: about 3 dozen.
