Drop Cookies
Christmas Cookies
- 3 egg whites
- 1/4 teaspoon salt
- 1/4 teaspoon cream of tartar
- 1 cup sugar
- 1/2 teaspoon almond extract
- 1 cup flaked coconut
- 1 cup regular or quick-cooking oats, uncooked
- 1/2 cup chopped pecans
Beat egg whites (at room temperature), salt, and cream of tartar until foamy. Gradually add sugar and almond extract, beating until stiff peaks form. Fold in coconut, oats and pecans.
Drop mixture by teaspoonfuls onto greased cookie sheets. Bake at 325° for 20 minutes. Cool slightly on cookie sheets. Remove to wire racks to cool completely.
Yield: about 4 dozen.
