Drop Cookies
Christmas Cookies
- 3 egg whites
- 1 cup sugar
- 1/2 teaspoon salt
- 1 cup flaked coconut
- 1 cup chopped pecans or walnuts
- 1 cup chopped dates
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
Beat egg whites (at room temperature) until foamy. Gradually add sugar, 2 tablespoons at a time, beating until stiff peaks form. Fold in pecans, dates, and flavorings.
Drop mixture by teaspoonfuls 2 inches apart onto greased cookie sheets. Bake at 325° for 20 minutes. (Do not overbake.) Remove to wire racks to cool. Store in airtight containers.
Yield: about 3 dozen.
