Drop Cookies
Christmas Cookies
- 2 eggs, beaten
- 2/3 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 teaspoon grated lemon rind
- 3/4 cup sugar
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
Combine eggs, oil, vanilla, and lemon rind in a large mixing bowl; add sugar, stirring until well blended.
Combine flour, baking powder, and salt in a medium mixing bowl; add to egg mixture, stirring well.
Drop dough by teaspoonful 2 inches apart onto ungreased cookie sheets. Flatten cookies with greased bottom of a glass dipped in sugar. Bake at 400° for 8 to 10 minutes or until lightly browned. Remove immediately from cookie sheets, and cool on wire racks. Store in airtight containers.
Yield: about 3 dozen.
