Drop Cookies
Christmas Cookies

  • 3/4 cup butter or margarine
  • 1 cup sugar
  • 1 egg, separated
  • 1 teaspoon grated orange rind
  • 1/4 cup honey
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground mace
  • Tinted flaked coconut

Cream butter in a large mixing bowl; gradually and sugar, beating until light and fluffy. Add egg yolk and orange rind; beat well. Stir in honey.

Combine flour, baking powder, salt, and mace. Gradually add to creamed mixture, blending well.

Drop dough by teaspoonfuls 2 inches apart onto ungreased cookie sheets; flatten each with a fork. Brush lightly beaten egg white over cookies; sprinkle coconut over egg cookies; sprinkle coconut over egg white. Bake at 350° for 10 to 14 minutes. Remove to wire racks to cool. Store in airtight containers.

Yield: 5 dozen.

Note: To tint coconut, sprinkle a few drops of food coloring over coconut: toss with a fork until evenly tinted.
