Oatmeal-Raisin Cookies

Drop Cookies
Christmas Cookies

  • 1/2 cup butter
  • 1 cup regular oats, uncooked
  • 1/4 cup milk
  • 1 egg beaten
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 cup raisins
  • 1/2 cup chopped pecans
  • 1 1/2 teaspoons vanilla extract

Melt butter in top of a double boiler over simmering water; add oats and milk, stirring well. Cover and cook over low heat 15 minutes. Remove from heat, and cool slightly; stir in egg.

Sift together flour, sugar, baking powder, soda, salt, cinnamon, and nutmeg; add to oats mixture, stirring well. Stir in raisins, pecans, and vanilla.

Drop dough by heaping teaspoonfuls 2 inches apart onto greased cookie sheets. Bake at 350° for 15 minutes. Cool slightly on cookie sheets. Remove to wire racks.

Yield: 3 1/2 dozen.
