Drop Cookies
Christmas Cookies
- 1/2 cup butter or margarine
- 1 (3 ounce) package cream cheese
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 (8 1/2 once) can crushed pineapple, well drained
- 1/2 cup chopped maraschino cherries
- 1 cup chopped pecans (optional)
Cream butter and cream cheese; add sugar, beating until light and fluffy. Add eggs, one at at time, beating well after each addition. Stir in flavorings.
Combine flour, baking powder, soda, and salt in a medium mixing bowl. Gradually add to creamed mixture. Stir in pineapple chopped cherries, and pecans, if desired. Drop dough by heaping tablespoonfuls 2 inches apart onto ungreased cookie sheets.
Bake at 375° for 12 minutes. Remove to wire racks to cool.
Yield: 2 dozen.
