Drop Cookies
Christmas Cookies
- 2/3 cup shortening
- 1 cup sugar
- 2 eggs
- 1 teaspoon baking soda
- 1/4 cup warm water
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 2 (8 ounce) packages chopped dates.
- 1 cup chopped pecans
Cream shortening in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating until well blended. Dissolve soda in warm water; stir into creamed mixture, blending well.
Sift together flour, salt, cinnamon, and cloves in a medium mixing bowl; add dates and pecans, stirring to coat well. Add to creamed mixture, stirring until thoroughly blended.
Drop dough by heaping teaspoonfuls 2 inches apart onto lightly greased cookie sheets. Bake at 350° for 12 to 14 minutes. Remove to wire racks to cool. Store in airtight containers.
Yield: about 7 1/2 dozen.
