- 2 eggs
- 1 1/3 cups firmly packed brown sugar
- 1/4 cup plus 1 tablespoon all-purpose flour
- 1/8 teaspoon baking powder
- 1/8 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts
Beat eggs in a medium mixing bowl until thickened and tripled in volume; gradually add sugar, beating well. Add flour, baking powder, salt and vanilla, mixing well. Stir in walnuts.
Drop dough by teaspoonfuls 2 inches apart onto parchment – or aluminum foil-lined cookie sheets. Bake at 375° for 6 minutes or until lightly browned. Cool completely on cookie sheets; store in air-tight containers.
Yield: about 5 dozen.
