Rolled and Sliced Cookies
- 2 tablespoons shortening
- 1/2 cup sugar
- 1 egg
- 1 tablespoon cold water
- 1 (1 ounce) square unsweetened chocolate, melted
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 tablespoon instant coffee granules
- 1/2 teaspoon ground cinnamon
- Additional sugar
Cream shortening in a large mixing bowl; gradually add 1/2 cup sugar, beating well. Add egg and water, beating until well blended. Stir in slightly cooled chocolate.
Combine flour, baking powder, coffee, and cinnamon in a small mixing bowl. Add to creamed mixture, stirring well. Wrap dough in waxed paper; refrigerate until firm.
Roll dough to 1/8 inch thickness on a lightly floured surface. Cut with a doughnut or round cutter. Sprinkle lightly with additional sugar. Place 2 inches apart on greased cookie sheets. Bake at 350° for 10 minutes. Remove to wire racks to cool. Store in airtight containers.
Yield: 2 1/2 dozen.
