Rolled and Sliced Cookies
Christmas Cookies
- 1 cup butter or margarine
- 2 cups sugar
- 2 eggs
- 1 egg, separated
- 2 teaspoons vanilla extract
- 4 cups all-purpose flour
- Cinnamon
- Additional sugar
Cream butter in a large mixing bowl; gradually add 2 cups sugar, beating well. Add eggs and egg yolk; beat well. Stir in vanilla. Add flour; mix well.
Roll to 1/4-inch thickness on a lightly floured surface. Cut with a 2 1/2-inch round cutter. Beat egg white lightly; brush over cookies. Combine cinnamon and additional sugar; sprinkle over cookies. Place 2 inches apart on greased cookie sheets. Bake at 350° for 8 to 10 minutes. Remove to wire racks.
Yield: about 6 dozen.
