Lemon Roll and Cut Cookies

Rolled and Sliced Cookies
Christmas Cookies

  • 1 cup butter
  • 1 cup sugar
  • 2 egg yolks
  • 1 teaspoon grated lemon rind
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 egg white
  • Ground almonds or pecans

Cream butter in large mixing bowl; gradually add sugar, beating until light and fluffy. Add egg yolks, lemon rain, juice; beat well. Divide dough into fourths. Cover with waxed paper, and chill 2 hours or until firm.

Work with one portion of dough chilled until ready to use. Roll to 1/4 inch thickness on a lightly floured surface. Cut into desired shapes with 2 inch cutters. Place 1 inch apart on ungreased cookie sheets; brush with egg white, and sprinkle with ground almonds or pecans. Bake at 325° for 15 to 20 minutes or until edges are lightly browned. Remove to wire racks to cool. Repeat procedure with remining dough.

Yield: about 5 dozen.
