Early American Ginger Cutouts

Rolled and Sliced Cookies
Christmas Cookies

  • 1/2 cup butter or margarine
  • 1/2 cup firmly packed dark brown sugar
  • 3/4 cup dark molasses
  • 1 egg, beaten
  • 2 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon hot water
  • 1 teaspoon 1 teaspoon vinegar

Cream butter in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add molasses and egg; beat until smooth.

Sift together flour, soda, salt, and spices; add to creamed mixture, stirring well. Add water and vinegar, blending well. Chill 2 hours or overnight.

Roll dough to 1/4 inch thickness on a lightly floured surface; cut with assorted cutters. Place 2 inches apart on greased cookie sheets. Bake at 350° for 15 minutes. Remove to wire racks to cool; decorate as desired.

Yield: about 2 1/2 dozen.
