Rolled and Sliced Cookies
Christmas Cookies
- 1/2 cup butter or margarine, softened
- 1/2 cup firmly packed brown sugar
- 1/2 cup molasses
- 1 egg
- 3 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup buttermilk
- Decorator Frosting (page 40)
- Currants
Cream butter; gradually add sugar, beating until light and fluffy. Add molasses and egg, mixing well.
Combine flour, baking powder, soda, salt, and spices. mixing well. Add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture. Shape into a ball; cover and chill 2 hour.
Roll dough to 1/4 inch thickness on a lightly floured surface; cut into desired shapes, Place 2 inches apart on lightly greased cookie sheets. Bake at 375° for 10 minutes. Remove to wire racks to cool. Decorate, as desired, with Decorator Frosting and currants, using frosting to attach currants. Store in airtight containers.
Yield: about 3 dozen.
