Rolled and Sliced Cookies
Christmas Cookies
- 1/2 cup butter or margarine
- 1/2 cup sugar
- 1/2 cup molasses
- 2 tablespoons rum
- 2 tablespoons water
- 2 1/2 cups all-purpose flour
- 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/2 cup finely chopped pecans
- 1/2 cup candied fruit, finely chopped
Cream butter; add sugar, beating until light and fluffy. Stir in molasses, rum, water, flour, soda, salt, and spices. Add pecans and candied fruit; mix well. Cover and chill 2 to 3 hours.
Roll dough to 1/4 inch thickness on a lightly floured surface. Cut with a 2 1/2 inch round cutter; place 2 inches apart on ungreased cookie sheets. Bake at 350° for 10 minutes; remove to wire racks to cool.
Yield: 3 dozen.
