Daisy Date Cookies

Rolled and Sliced Cookies
Christmas Cookies

  • 1 cup butter or margarine
  • 1 1/4 cups sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 cup regular or quick-cooking oats, uncooked
  • Date Filling

Cream butter in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add egg and vanilla, beating until well blended.

Combine flour and oats in a medium mixing bowl; add to creamed mixture, stirring well. (Dough may be chilled for easy handling.)

Roll dough to 1/8 inch thickness on a lightly floured surface. Cut with a 2 inch fluted cutter. Cut out centers of half of cookies with a 3/4 inch round cutter. Place cookies 2 inches apart on greased cookie sheets. Bake at 375° for 7 to 9 minutes. Remove to wire racks to cool.

Spread Date Filling evenly over bottom on each solid cookie. Top with remaining cookies, bottom sides down, to make sandwiches. Press lightly to fill cut-outs.

Yield: about 3 dozen.

Date Filling:

  • 1 (8 ounce) package chopped dates
  • 3/4 cup water
  • 1/4 cup sugar
  • 2 tablespoons lemon juice

Combine all ingredients in a medium saucepan. Cook over low heat, stirring constantly, 10 minutes or until mixture thickens. Cool completely before spreading on cookies.

Yield: filling for about 3 dozen cookies.
