Rolled and Sliced Cookies
- 1 cup butter or margarine
- 1 1/2 cups sifted powdered sugar
- 3 cups all-purpose flour
- 1/4 teaspoon salt
- 1 egg, lightly beaten
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
Cream butter; gradually add sugar, beating until light and fluffy.
Sift together flour and salt; add 1 cup flour mixture to creamed mixture, beating well. Add egg and vanilla, blending well. (Scrape bottom and sides of bowl often.) Add remaining flour mixture, beating well. Stir in pecans.
Shape dough into 2 rolls, 2 inches in diameter; wrap in waxed paper. Chill thoroughly. Remove waxed paper, and cut into 1/8 inch slices. Place 1 inch apart on lightly greased cookie sheets. Bake at 350° for 10 minutes or until edges are browned. Remove to wire racks to cool.
Yield: about 9 1/2 dozen.
