Rolled and Sliced Cookies
- 1 1/2 cups butter, softened
- 2 cups firmly packed brown sugar
- 2 eggs
- 3 cups all-purpose flour
- 2 teaspoons baking powder
Cream butter in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add eggs; beat well. Stir in flour and baking powder, mixing well.
Shape dough into 2 rolls, 2 inches in diameter. Wrap in waxed paper, and chill overnight or until firm. Remove waxed paper, and cut into 1/4 inch slices. Place 2 inches apart on ungreased cookie sheets. Bake at 375° for 8 minutes or until lightly browned. Remove to wire racks to cool.
Yield: about 7 dozen.
