Rolled and Sliced Cookies
Christmas Cookies
- 1/3 cup shortening
- 1/3 cup butter
- 1/3 cup sugar
- 1/2 cup firmly packed brown sugar
- 1 egg
- 1 teaspoon rum extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons instant coffee granules
- Pecan halves
Cream shortening and butter in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add egg; beat until well blended. Stir in rum extract, blending well.
Combine flour, baking powder, soda, salt, and coffee in a medium mixing bowl, stirring well. Add to creamed mixture; mix well.
Shape dough into 2 rolls, 2 inches in diameter; wrap in waxed paper, and chill 8 hours or overnight. Remove waxed paper, and cut into 1/8 inch slices. Place 1 inch apart on ungreased cookie sheets. Gently press a pecan half in center of each cookie. Bake at 400° for 8 to 10 minutes. Remove to wire racks to cool. Store in airtight containers.
Yield: 6 dozen.
