Rolled and Sliced Cookies
Christmas Cookies
- 1/3 cup butter or margarine
- 1/2 cup sugar
- 1/2 cup firmly packed brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 tablespoon milk
- 2 (1 ounce) squares chocolate, melted
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped pecans
Cream butter in a large mixing bowl; gradually add sugar, beating well. Add egg; beat well. Stir in vanilla, milk, and melted chocolate; beat well.
Sift together flour, baking powder, and salt in a medium mixing bowl; stir in pecans. Add to creamed mixture, mixing well.
Shape dough into rolls, 1 1/2 inches in diameter. Wrap in waxed paper, and chill thoroughly. Remove waxed paper, and cut into 1/8 inch slices. Place 1 inch apart on ungreased cookie sheets. Bake at 425° for 5 to 7 minutes. Remove to wire racks to cool.
Yield: 5 dozen.
Note: These cookies may be frozen before or after baking.
