Rolled and Sliced Cookies
- 1/2 cup butter or margarine, softened
- 3/4 cup sugar
- 1 egg
- 1 1/4 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Cream butter in a large mixing bowl; gradually add sugar, beating until light and fluffy . Add egg and vanilla, beating until well blended.
Sift together flour, baking powder, and salt in a medium mixing bowl; add to creamed mixture, mixing well.
Shape dough into a roll. 1 1/2 inches in diameter; wrap in waxed paper, and chill 2 hours. Remove waxed paper, and cut into 1/4 inch slices. Place 2 inches apart on lightly greased cookie sheets. Bake at 400° for 8 minutes. Remove to wire racks to cool.
Yield: about 3 dozen.
