Vanilla-Nut Icebox Cookies

Rolled and Sliced Cookies
Christmas Cookies

  • 1 cup shortening
  • 1 cup sugar
  • 1/4 cup firmly packed brown sugar
  • 1 egg, beaten
  • 2 teaspoons vanilla extract
  • 1 cup chopped pecans
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt

Cream shortening in a large mixing brown; gradually add sugar, beating until light and fluffy. Add egg and vanilla; beat well. Stir in pecans.

Combine flour, baking powder, and salt in a medium mixing bowl; gradually add to creamed mixture, stirring well.

Shape dough into 2 rolls, 2 inches in diameter. Wrap each in waxed paper; chill until firm. Remove waxed paper, and cut into 1/4 inch slices. Place 1 inch apart on ungreased cookie sheets. Bake at 425° for 5 minutes. Remove to wire racks to cool

Yield: about 5 dozen.
