Rolled and Sliced Cookies
Christmas Cookies
- 3/4 cup butter or margarine
- 1/2 cup sugar
- 1/2 cup firmly packed brown sugar
- 2 eggs
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup chopped candied cherries
- 1 cup chopped pecans
Cream butter in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add eggs, and beat well.
Combine flour, baking powder, soda, salt, and cinnamon in a medium mixing bowl. Add to creamed mixture, stirring well. Stir in cherries and pecans.
Shape dough into 2 rolls, 1 1/2 inches in diameter; wrap in waxed paper, and chill several hours or overnight. Remove waxed paper, and cut into 1/4 inch slices. Place 1 inch apart on greased cookie sheets Bake at 375° for 8 to 10 minutes or until lightly browned. Remover to wire racks to cool.
Yield: 8 dozen.
