Coconut Icebox Cookies

Rolled and Sliced Cookies
Christmas Cookies

  • 3 eggs, lightly beaten
  • 1 cup sugar
  • 1/2 cup firmly packed brown sugar
  • 1 1/2 cups shortening, melted
  • 4 cups grated coconut
  • 5 1/2 cups sifted cake flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt

Combine eggs, sugar, melted shortening, and coconut in a large mixing bowl, and mix well.

Sift together flour, baking powder, and salt in a large mixing bowl. Add to egg mixture, stirring well.

Press dough into a waxed paper-lined 8 inch square baking pan; cover and refrigerate overnight. Turn dough out of pan, and remove waxed paper. Slice dough in half, forming two 8 x 4 inch rectangles. Cut each portion crosswise into 1/4 inch slices. Place on ungreased cookie sheets. Bake at 400° for 10 minutes or until lightly browned. Remove to wire racks to cool.

Yield: about 5 dozen.
