Lemon-Nut Refrigerator Cookies

Rolled and Sliced Cookies
Christmas Cookies

  • 1 cup shortening
  • 1/2 cup sugar
  • 1/2 cup firmly packed brown sugar
  • 1 egg
  • 1 tablespoon grated lemon rind
  • 2 tablespoons fresh lemon juice
  • 2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup finely chopped walnuts

Cream shortening in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add egg, lemon rind, and juice, beating well.

Sift together flour, soda, and salt in a medium mixing bowl; gradually add to creamed mixture, mixing until well blended. Stir in walnuts.

Shape dough into 3 rolls, 1 1/2 inches in diameter. Wrap each roll in waxed paper, and cut into 1/4 inch slices.

Place 2 inches apart on ungreased cookie sheets. Bake at 400° for 8 to 10 minutes or until lightly browned. Remove to wire racks to cool.

Yield: 5 1/2 dozen.
