Rolled and Sliced Cookies
- 1 cup shortening
- 1/2 cup sugar
- 1/2 cup firmly packed brown sugar
- 1 egg, beaten
- 2 tablespoons grated orange rind
- 2 tablespoons orange juice
- 2 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1/2 cup chopped pecans
Cream shortening; gradually add sugar, beating until light and fluffy. Add egg, orange rind, and juice; beat well.
Sift together flour and soda; add to creamed mixture, mixing until well blended. Stir in pecans.
Shape dough into a roll, 2 inches in diameter; cover and chill several hours or overnight. Cut into 1/8 inch slices. Place 2 inches apart on ungreased cookie sheets. Bake at 375° for 10 to 12 minutes. Remove to wire racks to cool.
Yield: about 4 dozen.
