Rolled and Sliced Cookies
Christmas Cookies
- 1 cup butter or margarine
- 1 1/2 cups sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup chopped candied cherries
- 1/4 cup chopped pecans
- 1 (1 ounce) square unsweetened chocolate, melted
- 2 tablespoons poppy seeds
Line bottom and sides of a 9 x 5 x 3 inch loaf pan with waxed paper, and set aside.
Cream butter in a large mixing bowl; gradually add sugar, beating until light and fluffy . Add egg; beat well. Stir in vanilla.
Sift together flour, baking powder, and salt in a medium mixing bowl. Add to creamed mixture; mix well.
Divide dough into thirds. Add cherries to one portion, and spread evenly in prepared pan. Add pecans and melted chocolate to second portion; spread evenly over dough in pan. Add poppy seeds to remaining portion; spread evenly over dough in pan. Cover with waxed paper; chill overnight.
Turn dough out of pan, and remove waxed paper; cut into 1/8 inch slices. Place 2 inches apart on greased cookie sheets. Bake at 400° for 10 minutes. Remove to wire racks to cool.
Yield: 6 to 8 dozen.
