Rolled and Sliced Cookies
Christmas Cookies
- 1 cup butter or margarine
- 1/2 cup sugar
- 1/2 cup firmly packed brown sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup flaked coconut
- 1/2 cup chopped raisins
- 1/2 cup chopped pecans
Cream butter in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add egg and vanilla; beat until well blended.
Combine flour, soda, and salt in a medium mixing bowl; add to creamed mixture, beating well.
Divide dough into thirds. Add coconut to one portion, raisins to second portion, and pecans to remaining portion; mix well. Shape each portion into a roll, 1 inch in diameter; wrap in waxed paper, and chill overnight.
Remove waxed paper, and cut into 1/8 inch slices. Place 2 inches apart on greased cookie sheets. Bake at 375° for 8 minutes or until lightly browned. Remove to wire racks to cool.
Yield: 6 dozen.
