Rolled and Sliced Cookies
Christmas Cookies
- 1/2 cup shortening
- 1 cup sugar
- 2 eggs, well beaten
- 1 teaspoon vanilla extract
- 1 3/4 cups whole wheat flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup finely chopped black walnuts
Cream shortening in a large mixing bowl; gradually add sugar, beating well. Add eggs; beat well. Stir in vanilla
Combine remaining ingredients, and stir into creamed mixture. Chill dough 2 hours or until firm.
Shape dough into a roll, 2 1/2 inches in diameter; wrap in waxed paper, and chill 3 to 4 hours. Remove waxed paper; cut into 1/4 inch slices. Place 2 inches apart on ungreased cookie sheets. Bake at 400° for 6 to 8 minutes. Remove to wire racks to cool.
Yield: about 5 dozen.
