Rolled and Sliced Cookies
Christmas Cookies
- 1/2 cup butter or margarine, softened
- 1/2 cup sugar
- 3 tablespoons milk
- 1 egg yolk, beaten
- 1/2 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/8 teaspoons salt
- 1 (1 ounce) square unsweetened chocolate, melted
Cream butter; gradually add sugar, beating until light and fluffy. Add milk, egg yolk, and vanilla, stirring well.
Sift together flour, baking powder, and salt; add to creamed mixture, stirring until well blended.
Divide dough in half. Add chocolate to one portion; mix well, and chill. Roll remaining dough to a 14 x6 inch rectangle on waxed paper. Repeat procedure with chocolate dough. Invert chocolate rectangle directly on top of light rectangle; remove waxed paper from chocolate dough. Roll up jellyroll fashion, beginning with long side; remove remaining waxed paper while rolling. Chill 1 hour. Cut into 1/4 inch slices; place w inches apart on greased cooked sheets. Bake at 375° for 8 to 10 minutes. Cool slightly on cookie sheets, and remove to wire racks.
Yield: about 5 dozen.
