Christmas Cookies
- 1 cup butter or margarine
- 2/3 cup sugar
- 1 cup firmly packed brown sugar
- 1 egg beaten
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1/8 teaspoon salt
- 1 cup regular oats, uncooked
- 1 cup chopped dated
- 1 cup chopped pecans
- Additional sugar
Cream butter in a large mixing bowl; gradually add 2/3 cup sugar and brown sugar, beating until light and and fluffy. Add egg; beat well. Stir in vanilla.
Sift together flour, soda, and salt; add to creamed mixture, blending well. Stir in oats in oats, dates and pecans.
Shape dough into 3/4 inch balls, and roll in additional sugar. Place 2 inches apart on greased cookie sheets. Bake at 350° for 10 10 to 12 minutes. (Cookies will puff up and then flatten.) Remove to wire racks to cool. Store in airtight containers.
Yield: about 7 dozen.
