Christmas Cookies
- 1 cup butter or margarine, softened
- 1/2 cup sugar
- 1/2 cup light corn syrup
- 2 eggs, separated
- 2 1/2 cups all-purpose flour
- 2 cups finely chopped pecans
- Candied cheery halves
Cream butter in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add syrup, egg yolks, and flour; mix well. Chill.
Shape dough into 1 inch balls; dip each in lightly beaten egg whites, and roll in pecans. Gently press a cherry half, cut side down, into center of each. Place 1 1/2 inches apart on greased cookie sheets. Bake at 325° for 20 minutes. Remove to wire racks.
Yield: 4 dozen.
