Christmas Cookies
- 1 (6 ounce) package semisweet chocolate morsels
- 1/2 cup plus 1 1/2 tablespoons shortening
- 3/4 cup sugar
- 1 egg
- 1/4 cup light corn syrup
- 1 teaspoon peppermint extract
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup crushed peppermint candy
- Additional sugar
Melt chocolate morsels in top of a double boiler over simmering water.
Cream shortening in a large mixing bowl; gradually add 3/4 cup sugar, beating until light and fluffy. Add chocolate, beating well. Add egg, syrup, and flavorings; beat well.
Combine flour, soda, salt in a large mixing bowl; stir in chocolate mixture and peppermint candy.
Shape dough into 1 inch balls, and roll in additional sugar; place 2 inches apart on ungreased cookie sheets . Bake at 350° for 12 to 15 minutes. Cool on cookie sheets 5 minutes. Cool on cookie sheets 5 minutes; remove to wire racks. Store in airtight containers.
Yield: about 7 dozen.
