Christmas Cookies
- 1 cup shortening
- 1 cup sugar
- 1 cup firmly packed dark brown sugar
- 2 eggs, well beaten
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup flaked coconut
- 2 cups quick-cooking or regular oats, uncooked
- 1 cup chopped pecans
- 1 cup chopped gumdrops
Cream shortening in a large mixing bowl; gradually add sugar, beating well. Add eggs; beat well. Stir in vanilla.
Sift together flour, baking powder, soda, and salt; add to creamed mixture, mixing well. Stir in coconut, oats, pecans and gumdrops.
Shape dough into 1 inch balls; place 2 inches apart on greased cookie sheets. Gently flatten balls, using a fork dipped in flour. Bake at 375° for 10 minutes. Remove to wire racks to cool.
Yield: 5 dozen.
