Christmas Cookies
- 1/4 cup shortening
- 1/4 cup butter
- 1/2 cup peanut butter
- 1/2 cup sugar
- 1/2 cup firmly packed brown sugar
- 1 egg
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
Cream shortening , butter, and peanut butter in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add egg; beat well.
Sift together flour, baking powder, soda, and salt in a medium mixing bowl. Add to creamed mixture, blending well. Chill thoroughly.
Shape dough into 1 1/2 inch balls. Place 3 inches apart on lightly greased cookie sheets. Gently flatten with a fork dipped in flour, making a crisscross pattern on each. Bake at 375° for 10 to 12 minutes. Remove to wire racks to cool.
Yield: about 3 dozen.
