Christmas Cookies

  • 1 cup shortening
  • 3/4 cup sugar
  • 1 cup firmly packed brown sugar
  • 2 eggs
  • 1 cup peanut butter
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 cup quick-cooking or regular oats, uncooked

Cream a shortening in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add eggs and peanut butter; beat well.

Sift together flour, soda, and salt in a medium mixing bowl. Add to creamed mixture; mix well. Stir in oats. Shape dough into 1 inch balls; place 3 inches apart on ungreased cookie sheets. Gently flatten with a fork dipped in flour, making a crisscross pattern on each. Bake at 350° for 8 to 10 minutes. Remove to wire racks to cool.

Yield: 6 dozen.
