Christmas Cookies
- 1/2 cup shortening, softened
- 1/2 cup sugar
- 1/2 cup firmly packed brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon water
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup quick-cooking or regular oats, uncooked
- Powdered Sugar Frosting
- Semisweet chocolate morsels
- Gumdrops
- Cinnamon candies
- Tinted flaked coconut
Cream shortening in a large mixing bowl; gradually add sugar, beating well. Add egg; beat well. Stir in vanilla and water.
Sift together flour, baking powder, and salt in a medium mixing bowl. Gradually add to creamed mixture, beating until mixture is smooth. Stir in oats blending well.
Shape dough into 1 inch balls; place 2 inches apart on ungreased cookie sheets and flatten with bottom of a glass dipped in flour. Insert a wooden skewer in top of each. Bake at 350° for 11 to 12 minutes. Remove to wire racks to cool. Using Powdered Sugar Frosting, attach semisweet chocolate morsels for eyes, gumdrops for nose, cinnamon candies for mouth, and tinted coconut for hair.
Yield: 2 dozen
Powdered Sugar Frosting:
- 1/2 cup powdered sugar
- Hot water
Sift powdered sugar into a small mixing bowl. Add enough hot water to yield desired spreading consistency, beating with a wire whisk until smooth.
Yield: frosting for 2 dozen cookies.
